This is a delicious change from the usual white or brown rice. The recipe includes walnuts, olive oil, leeks, long-grain rice, wild rice, salt, pepper, and parsley for garnish. The dish takes about 35 minutes to prepare and 10 minutes to cook. It serves 4 people. To make the dish, heat a medium-sized pot with a lid over medium heat. Add the walnuts, toast them until they are light and fragrant, about 4 to 6 minutes. Remove the walnuts and set them aside. In the same pot, heat the oil over medium-low heat. Add the leeks and cook until they are translucent, about 2 to 4 minutes. Add the rice mixture and 2 cups of water. Season with salt and pepper. Bring to a boil. Cover and reduce the heat to medium-low. Cook until the liquid is absorbed and the rice is tender, about 25 minutes. Fluff with a fork. Serve topped with the walnuts and parsley, if desired.
