This recipe for Franky meatballs comes from “The Cooking Book in Raw” by director Frank Biligrino. Raw is one of Michael Kors favorite restaurants in Manhattan. The recipe makes 14 to 18 meatballs. In a large bowl, mix ground beef and pork using your hands. Crush 1/2 garlic clove and add to the meat mixture with eggs, cheese, and parsley. Season with salt and pepper. Continue mixing with your hand until well blended. Add breadcrumbs and mix well. Add water, one cup at a time, and continue mixing until the mixture is completely moist. Shape the mixture into 2 1/2 to 3-inch balls. Heat the oil in a large skillet over medium-high heat. Crush the remaining garlic with the back of a knife and add to the skillet. Cook until light in color and fragrant, from one to two minutes; remove with a spoon for a specified period and ignore. In batches, add the meatballs to the skillet. Cook the mixture until it is cooked and ground, and stir for 10 minutes. Drain the paper towels and serve immediately. In the meantime, bring the marinara sauce to a boil in a large non-reactive pot. Reduce the heat to simmer and add the meatballs. Let the meatballs cook in the sauce for about 20 minutes; serve immediately with pasta, if desired.
