This is our favorite way to consume a large amount of mung beans. Arrange the green beans and garlic in a clean glass jar. In a saucepan, bring the vinegar, salt, pepper, sugar, and chilies to a boil. Carefully pour the mixture into the jar, cover with a lid, and cool to room temperature. Cooks note: The pickles can be refrigerated for up to 1 month.
