Thoroughly wash, rinse, and dry 7 8-ounce plastic freezer containers or glass jars with tight-fitting lids. You can also use zip-top freezer bags. 2. In a bowl, stir together the sugar and pectin; add to the fruit, stirring until the sugar mixture dissolves and the fruit returns to a full boil. Boil for 1 minute, then remove from the heat. 4. Transfer to jars or bags, leaving 1/2 inch of space at the top. Seal and place at room temperature until set, 2 to 3 hours. Store, freeze, for up to 6 months. Thaw the jam, transfer to the refrigerator, and use within 3 weeks. Variation This recipe also works for berries. Youll need about 2 1/2 pounds of strawberries, blueberries, raspberries, or blackberries to make 5 cups of crushed berry jam. Cooks Notes Quick Tip for Freezing Jams This recipe was tested using Ball and Sure-Jell brand pectin; look for it in the baking aisle of your supermarket. Always leave at least 1/2 inch of headspace, as the jelly will expand when frozen. Make sure your fruit is ripe and the jam sets properly. To crush fruit, chop meat and mash potatoes.
