The ingredients include coarse salt, 12 ounces of Italian wide noodles, 2 tablespoons of butter, 1 and 1/2 cups of milk, 1/2 cup of grated Pecorino Romano cheese, 1/2 cup of grated Parmesan cheese, and 1/4 cup of chopped fresh parsley. To make the sauce, cook the noodles in boiling salted water until al dente. Reserve 1 cup of pasta water and drain the noodles. In a pan, melt the butter over medium heat. Add half of the cheese and stir until combined, then bring to a boil. Add the noodles and toss to combine. Gradually add enough reserved pasta water to thin the sauce if needed. Sprinkle with parsley.
