This is a very traditional cold cabbage salad, which is made with chopped sweet peppers and thinly sliced carrots. To make this salad, you will need 2 large bunches of cabbage, with the center ribs removed and sliced thinly (about 10 cups), 1 yellow, orange or red sweet pepper, with the ribs and seeds removed, halved and sliced thinly lengthwise, 2 carrots, sliced thinly crosswise, 1/2 cup vegetable oil, 1/4 cup apple cider vinegar, 1/4 cup salted peanuts, plus 1/4 cup chopped salted peanuts, 2 tablespoons packed light brown sugar, and 1/2 teaspoon coarse salt. To prepare, simply combine the cabbage, sweet pepper and carrots in a large bowl. In a blender, puree the vegetable oil, apple cider vinegar, salted peanuts, brown sugar and coarse salt until smooth. Pour the dressing over the vegetables and toss to coat. Sprinkle with chopped salted peanuts and serve.
