This dish is inspired by Spanish seafood rice and is perfect for a family night, but also makes a wonderful presentation for a company. Cooking the ingredients in a skillet allows the orzo to absorb all the wonderful flavors. The recipe calls for 35 minutes of total time, with 15 minutes of preparation and yields 4 servings. The ingredients include 2 tablespoons of extra-virgin olive oil, 6 cloves of chopped garlic, 3 cups of halved grape tomatoes (about 1 pound), coarse salt and pepper, 3/4 pound of orzo, 3 1/4 cups of low-sodium chicken broth, 1 pound of peeled and deveined shrimp, and 1 cup of torn fresh basil leaves. The cooking instructions involve preheating the oven to 400 degrees, heating oil in a large ovenproof skillet, adding garlic and tomatoes, cooking until softened, adding orzo and broth, and baking in the oven until most of the liquid is absorbed. The shrimp is then added and cooked until opaque, and basil is sprinkled on top before serving. Orzo can also be used in soups or stews.
