Heat the olive oil in a medium-sized pot over medium-high heat. Add the onion. Remove from heat and stir in the vinegar, mustard, 3/4 teaspoon of salt, and 1/4 teaspoon of pepper. Mix the spinach, pork, and radishes in a large bowl. Pour the onion mixture over the salad and toss evenly. Serve with the well-cooked eggs.
