This healthy soup is prepared with tons of leafy greens and nutritious vegetables that make you feel full. It makes three servings of 3 cups each. For the large batch, you will need one large onion, cubed, 3 tablespoons of extra-virgin olive oil, 7 carrots, cubed (about 5 cups), 1/4 teaspoon of turmeric, 1 tablespoon of coarse salt, and 8 ounces of green beans, cut into 1/2-inch pieces. For each serving, you will need 1 cup of packed baby spinach, 3 tablespoons of fresh chopped dill, and 2 tablespoons of lemon juice. To prepare, cook the onion in oil until tender, then add the carrots, turmeric, and salt. Add 10 cups of water, bring to a boil, and simmer for 30 minutes. Add the green beans and cook until tender, about 2 minutes. To serve, fill a bowl with spinach and dill, ladle 3 cups of hot soup over the greens, cover with a lid, and let sit for 5 minutes. Add lemon juice. Cooks note: Make the base and simply add fresh herbs and greens each time you serve.
