عند طبخ هذا الطبق ، لا تقم بتجشيم الخضار ، أو سوف تبخر بدلاً من أن تحمر. إذا لم تكن المقلاة كبيرة بما فيه الكفاية ، قم بطهيها على دفعتين.

Fresh lemon and mint juice add bright notes to a quick fry, making it the perfect accompaniment to grilled chicken or fish. Source: Martha Stewart Living, March 2000, 6 servings. Ingredients: 3 tablespoons olive oil, 1 medium garlic clove, chopped, 1 small onion, sliced thinly, 2 medium zucchini (about 12 ounces), cut into 1/2-inch pieces, 2 medium yellow squash (about 12 ounces), cut into 1/2-inch pieces, 1/8 teaspoon crushed red pepper, 1 tablespoon fresh lemon juice, coarse salt and freshly ground pepper, 1/3 cup fresh mint leaves, cut into thin strips (or 1/4-inch julienne). Directions: 1. Heat half of the olive oil in a large skillet over medium to low heat. Cook the garlic and onion, stirring, until translucent but not browned, about 2 minutes. 2. Increase the heat to medium-high. Add the remaining oil with the zucchini, squash, and crushed red pepper. Cook the mixture over low heat, stirring occasionally, until the vegetables are tender and golden, about 5 minutes. Remove from the heat and stir in the lemon juice and season with salt and pepper. Transfer to a serving dish, sprinkle the mint on top, and serve immediately. Cooking notes: When cooking this dish, do not overcrowd the vegetables, or they will steam instead of brown. If the skillet is not large enough, cook in batches.
