Ingredients: – 1 bunch flat-leaf parsley – 1 1/4 pounds ground lamb – Kosher salt and freshly ground pepper – 1 tablespoon extra-virgin olive oil, plus more for brushing – 4 ounces crumbled feta (3/4 cup) – 7 ounces plain Greek yogurt (3/4 cup) – 1 tomato (about 7 ounces), cored and chopped coarsely – 4 brioche buns, preferably seeded, split – Rosemary sprigs, for serving
Directions: 1. Heat a grill to medium-high. Pluck off the parsley leaves and upper stems, discarding the tougher lower ones. Chop half the parsley (you should have about 1/2 cup packed). Gently grind the chopped parsley until evenly combined (dont overdo it, or the patties will be tough). Shape into 4 patties slightly wider than the buns, each about 1/2 inch thick. Season generously with salt and pepper. Brush with oil. 2. Mix the cheese and yogurt with the chopped parsley and 1/4 teaspoon salt and pepper. In another bowl, toss the tomato with the whole parsley leaves and tender stems and the oil. Season with salt. 3. Clean the grill brush with oil and grill the patties, flipping once, until charred in spots and cooked to desired doneness, 5 to 7 minutes for medium-rare, 9 to 11 minutes for medium. Transfer to a plate and let stand a few minutes. Meanwhile, char the cut sides of the buns until toasted in spots, about 30 seconds. 4. Divide the patties, feta yogurt sauce, and tomato salad evenly among the buns. Serve immediately, with fries.
Variations: These burgers can also be made with ground beef.
