This is a warm summer afternoon vegetarian dish. Recipe source: Whole Living, January/February 2013. Makes 6 servings. Ingredients: 6 cups frozen mango, slightly thawed; 1/4 cup light coconut milk; 2 tablespoons orange juice; 2 tablespoons honey; 1 teaspoon vanilla extract. Directions: Mix mango, coconut milk, orange juice, honey, and vanilla until well combined. Fill ice cube molds and freeze.
