This recipe for a slightly thick pie is easy to make with a quick homemade mix, which requires added ingredients anyway. Using organic ingredients seems to give the pies a cleaner and healthier flavor. From the book “Mad Hungry” by director Lucinda Scala Quinn (Artisan Books). Makes 2 cups of mix. 16 4-inch pancakes Yield Ingredients 1 1/2 cups all-purpose flour 1 tablespoon sugar 1 teaspoon coarse salt 2 3/4 teaspoons baking powder 1 large egg, lightly beaten 1 1/4 cups milk 3 tablespoons unsalted butter, melted, plus more for serving Vegetable oil, for grilling Pure maple syrup, warm, for serving Directions 1. Place a heat-resistant dish in a warm oven (at 200 degrees). 2. In a large bowl, whisk together the flour, sugar, salt, and baking powder. Make a well in the center of the flour mixture. Add the egg and milk and 2 tablespoons of butter. Whisk from the center, slowly incorporating the flour. Rest the mixture for 10 minutes. 3. Heat a large, well-seasoned cast-iron skillet or favorite baking sheet over medium-high heat. Dab the remaining tablespoon of butter in the skillet (or use oil to coat the baking sheet) and immediately pour in 1/4 cup of the mixture for each pie. When bubbles rise to the surface, flip the pies, reduce the heat slightly, and cook until the bottoms are golden and cooked, about 1 minute. (The first pie rarely works because it takes some time to get the groove with the heat, fat, and dough.) 4. As the pies come out of the skillet, place them on a warm plate in the oven until ready to serve. Serve a stack of 3 pies, topped with more butter and maple syrup.
