These beef taco sandwiches are a fun and delicious way to enjoy a meal together. Fill the tortilla with lettuce and beef, then each person can add their favorite toppings. This recipe is from Everyday Food, October 2003. It takes 25 minutes to prepare, 10 minutes to cook, and serves 4. The ingredients include canola oil, finely chopped onion, jalapeno pepper, salt, ground pepper, minced garlic, hot chili powder, ground cumin, ground beef, canned diced tomatoes with juice, corn tortilla chips, optional toppings such as cilantro, iceberg lettuce, jalapeno cubes, pickled jalapenos, Monterey Jack cheese, sour cream, and optional sides such as pico de gallo and guacamole. To make the recipe, heat oil in a large skillet over medium-high heat. Add onion and jalapeno, season with salt and pepper, and cook until tender, about 4-5 minutes. Add garlic, hot chili powder, and cumin to the skillet and cook until fragrant, about 1 minute. Add ground beef and cook, stirring occasionally, until no longer pink, about 5 minutes. Add canned tomatoes and cook over low to medium heat, stirring occasionally, until thickened, about 10-12 minutes. Season with salt and pepper as needed. Meanwhile, warm tortilla chips in a dry skillet over medium heat or directly on a gas stove, about 30 seconds on each side. Fill the tortilla with the beef mixture and desired toppings. Notes: Instead of beef, you can substitute turkey or chicken. To make the beef less spicy, remove jalapeno seeds and ribs before adding or omit altogether.
