This is a refreshing tomato sauce, a delicious mix of grilled sausages, onions, and peppers. Grilled vegetables give the salsa a smoky flavor. Recipe from Martha Stewart Living, September 1999. Makes 2 cups. Ingredients: 1 pound (about 14) tomatillos, 1/2 small jalapeño, 1 small yellow onion, halved, 2 tablespoons olive oil, 1 lime, 1 teaspoon coarse salt, 1 teaspoon sugar, 1/2 teaspoon ground cumin, 1/4 cup fresh cilantro, coarsely chopped. Directions: 1. Heat an outdoor or stovetop grill. Place the tomatillos, jalapeño, and onion in their husks and lightly brush with olive oil. Grill the vegetables until soft, about 15 minutes. 2. Remove the husks from the tomatillos. Place the grilled vegetables in the bowl of a food processor. Add the lime juice, salt, sugar, cumin, and cilantro. Pulse the mixture until a salsa forms, about 8 pulses. Serve with warm corn chips. Cooks note: When you grill the tomatillos in their husks, they cook but dont get charred. Adjust the heat of the salsa with more or less jalapeño.
