This classic side dish can be prepared in advance and reheated for your weekend dinner. The recipe calls for 1 pound of curly spinach, washed and with the stems removed, salt and pepper, 2 tablespoons of butter, 1 chopped onion or 2 tablespoons of chopped shallots, 1 tablespoon of all-purpose flour, and 3/4 to 1 cup of milk.
To prepare, cook the spinach in a large skillet until wilted, about 4 to 5 minutes. Drain and rinse with cold water, squeezing out as much liquid as possible. In another skillet, cook the onion with salt and pepper until soft, about 3 to 5 minutes. Add the flour and cook for 1 minute, then add 3/4 cup of milk and cook until thickened, about 1 to 2 minutes. If needed, add more milk. Remove from heat and stir in the spinach. Season with salt and pepper and serve.
