This sweet ginger tea is the perfect way to start your morning, maybe with some happy pistachio raisin cookies. The recipe calls for 3 cups of water, 1 1/2 inches of fresh ginger (unpeeled and halved lengthwise), 4 tea bags (such as black tea), 1 cinnamon stick (plus 4 for garnish), 8 whole cloves, 1/4 teaspoon of black pepper, 2 cups of low-fat milk (2%), and 1/4 cup of honey (or to taste). Boil the water and ginger in a large pot, reduce heat and simmer for 8 minutes. Add the tea bags, cinnamon stick, cloves, black pepper, and milk. Simmer over medium-low heat until fragrant, about 6 minutes. Strain through a sieve and discard solids. Stir in 1/4 cup of honey (or to taste) and divide among cups. Reheat and add a cinnamon stick if desired. This recipe was sourced from the January/February 2004 issue of Everyday Food and takes 25 minutes total with 5 minutes of prep time and yields 4 servings.
