This antioxidant salad is a delicious appetizer. The recipe comes from Body + Soul, December 2008. The ingredients include 1 pomegranate, 1/4 cup fresh lemon juice, 1 teaspoon Dijon mustard, 2 tablespoons olive oil, salt and pepper, 2 bunches of spinach, 2 tablespoons roasted, shelled sunflower seeds, and 1 Hass avocado. To make the salad, cut the pomegranate in half and remove the seeds. In a large bowl, mix 3 tablespoons of lemon juice, mustard, and oil. Add the spinach, sunflower seeds, and pomegranate seeds to the bowl and mix well. Cut the avocado into thin slices and sprinkle with lemon juice. Arrange the salad on a serving plate and top with the avocado slices. Serve immediately.
