Here is a fun alternative to regular old white bread: all the typical sandwich-fixing elements – cold cuts, mustard, relish, and sausage – wrapped in a package. Source: Daily Food, April 2004. 2 servings. Ingredients: 2 tablespoons reduced-fat mayonnaise, 1 tablespoon apple cider vinegar, 1/2 teaspoon sugar, 1/8 teaspoon dried dill, 4 ounces sour cream (about 2 cups chopped cabbage and carrots mixed), 1 1/2 tablespoons horseradish mustard, 1 tablespoon pickles, 2 sandwich wraps (10 inches), 2 ounces (8 slices) thinly sliced salami, 1/2 small red onion, thinly sliced. Instructions: 1. In a large bowl, mix mayonnaise, apple cider vinegar, sugar, and dried dill. Add the peach mixture and stir to cover. 2. In a small bowl, mix horseradish mustard with cooking drink. Spread the mixture over 2 sandwich wraps, leaving a 2-inch border. Top with salami, sour cream from red juice, and red onion, dividing evenly. 3. Fold over about an inch on two opposite sides, then flip over from one of the open sides to close. Wrap in parchment if desired, then in plastic; chill for at least 30 minutes before slicing. Variations: You can use thinly sliced roasted chicken breast instead of salami. For a vegetarian wrap, substitute 4 ounces of thinly sliced cheddar, Swiss, or Muenster cheese.
