These crunchy croquettes are a great way to use leftover mashed potatoes and add depth to your meal. The recipe calls for 2 cups of mashed potatoes, 2 teaspoons of chopped fresh parsley, coarse salt and ground pepper, 1 cup of all-purpose flour, 1 large egg, 1 1/2 cups of fresh breadcrumbs, and vegetable oil. In a large bowl, mix the mashed potatoes and parsley together, season with salt and pepper. In a shallow bowl, add the flour and season with salt and pepper. In another shallow bowl, whisk the egg and 1 tablespoon of water. In a third shallow bowl, place 1 1/2 cups of breadcrumbs. Form the potato mixture into 3/4-inch to 2-inch patties. Roll in flour, shake off excess, dip in egg wash, and then roll in breadcrumbs to coat. In a heavy medium saucepan, heat 1 1/2 inches of vegetable oil over medium heat until hot. In batches, fry the croquettes until golden brown on all sides, about 2 minutes per batch, turning as needed. Drain on paper towels. Delicious!
