This is a rich and satisfying evening with great flavors. The recipe includes penne rigate or other short pasta, unsalted butter, ground beef, dry white wine, heavy cream, fresh lemon juice, thinly sliced smoked salmon, and chopped fresh chives. The pasta is cooked according to the instructions and the beef is cooked in butter with salt and pepper. The wine is added and cooked until evaporated, then the cream is added and brought to a boil. The pasta is drained and returned to the pot with the cream sauce, lemon juice, smoked salmon, and chives. Adjust the thickness with reserved pasta water and season with salt and pepper if necessary. Before adding salt, taste the dish as some smoked salmon can be very salty.
