The ingredients include 4 ounces of roots, 8 ounces of various baby lettuces such as oak, Lolla Rossa, and bibb, 1 bunch of watercress with stems removed, 1 large pink grapefruit, 1 small avocado peeled, weighed, and cut into 1/2-inch cubes, 1 small red papaya peeled and cut in half, and Papaya Citrus Vinaigrette. The instructions are to mix the mache, all baby lettuces, and watercress in a large bowl and toss to combine. Then, transfer to a serving platter. Cut both ends of the grapefruit and remove the skin and outer membrane with a sharp knife. Arrange the grapefruit slices upside down in the center of the greens. Place the avocado cubes on top of the grapefruit slices. Remove the papaya seeds and reserve the vinaigrette. Cut the papaya into 1/2-inch thick slices and arrange them on the other side of the grapefruit slices. Top with onion rings. Drizzle the vinaigrette over the entire salad and serve immediately.
