These simple green beans find the perfect balance between salty and lemony flavors. Spread the beans out for the day, then sauté them just before dinner for a fresh side dish that comes together in a flash. The recipe calls for 1 pound of green beans, cut, 2 tablespoons of extra-virgin olive oil, 4 cloves of garlic, thinly sliced (2 tablespoons), coarse salt and freshly ground pepper, and 1 small lemon, very thinly sliced (about 1/3 cup). To prepare, blanch the green beans in salted water until they are crisp-tender, about 5 minutes. Drain and transfer to a large platter or rimmed baking sheet to cool. Heat the oil in a large skillet over medium-high heat. Add the garlic and cook until softened and beginning to color, 1-2 minutes. Add the green beans and season with salt and pepper. When the green beans are hot, toss in the lemon slices and cook for 1 minute on high. Check the seasoning – the beans should be well-seasoned and bright, but not too sour. Serve hot, or at room temperature.
