Add the cumin and coriander; cook, stirring, until fragrant, about 30 seconds. Add the tomatoes, sugar, and 1 cup of water and cook until heated through, about 5 minutes. In batches, puree the soup in a blender until smooth (be careful when blending hot liquids). Strain through a fine-mesh sieve. Stir in the butter and season with salt and pepper. Serve the soup with cilantro leaves and red pepper flakes.
