This spicy hot sauté goes well with Jerk Pork Tenderloin or grilled chicken and beef. Source: Body + Soul, July/August 2008. Total time 25 min, prep 10 min, serves 4. Ingredients: 2 tbsp olive oil, 1/2 small red onion thinly sliced lengthwise, 1-2 bell peppers, ribs and seeds removed, thinly sliced lengthwise, 1 carrot thinly sliced diagonally, 1/2 jalapeno pepper thinly sliced, 1/4 cup cider vinegar, 2 tbsp Worcestershire sauce, 2-3 tsp hot pepper sauce, 1 tbsp sugar, 1 cup reduced-sodium chicken broth, 2 tbsp chopped fresh cilantro. Instructions: 1. In a large skillet, heat oil over medium heat. Cook onion, peppers, carrot, and jalapeno until tender, about 4 minutes. Increase heat to high. Add vinegar, Worcestershire, hot pepper sauce, sugar, and broth; cook until reduced by half, 6-8 minutes. Stir in cilantro and serve. Cooking notes: Serve dish hot, at room temperature, or chilled.
