These dairy-free pancakes are cooked with coconut oil. Try orange slices and honey on top instead of maple syrup. Source: Koko elämä, January / February 2013. The ingredients include half a mashed banana, half a cup of unsweetened almond milk, 3 tablespoons of flaxseed meal, 4 teaspoons of coconut oil divided, half a cup of oat flour, half a cup of unsweetened shredded coconut, a quarter cup of orange juice, half a teaspoon of baking powder, half a teaspoon of ground cinnamon, coarse salt to taste, orange segments to serve, and honey to serve. The instructions are to mix the banana, almond milk, flaxseed meal, and 2 teaspoons of oil in a bowl and let it sit until thick, about 10 minutes. Then, whisk oat flour, coconut, orange juice, baking powder, cinnamon, and salt. Heat 2 teaspoons of oil in a cast-iron skillet over medium heat. Spoon 1/4 cup of batter and flatten to a 3-inch round with a spatula. Cook until golden, flipping once, about 6 minutes per side. Serve with orange segments and honey.
