Photo by: Audrey Melkern Butternut Squash and Ricotta on a Dry Pear Thanksgiving is about giving thanks and celebrating the harvest, and what better food represents the season than butternut squash? This gluten-free recipe will turn your traditional squash into a modern masterpiece. To make it, take a dried pear and scoop out a little fresh ricotta cheese in the center. Fresh is best here, but your usual store-bought ricotta cheese will do. Then, take a little baked pastry and cut it into small cubes. We used a pastry that was sweetened with brown sugar, but thats not mandatory. Nestle the cubes of squash on top of the ricotta and garnish with a fried leaf of garden sage. Instead of filling your guests with heavy desserts, try this new twist on the classic pecan recipe by deconstructing it with a luxurious new twist. You can also take advantage of the leftover pecan pie filling and turn it into this delicious treat! First, youll either need leftover pecan pie filling (which is very hard to come by in my house, as it usually disappears at a furious pace), or you can bake some pecans with butter, brown sugar, cinnamon, and nutmeg. Place a dollop of the pie filling on a dry orange cracker. Then, drizzle with chocolate of your choice. You can get creative here! Feel free to experiment with super dark chocolate or try lightly melting Nutella in the microwave. Also, make sure to melt the chocolate the right way to get the rain effect you want.
