This recipe for simple beef stew comes together quickly and then simmers slowly for a delicious finish. The ingredients include 2 1/2 pounds of beef chuck roast, cut into 1 1/2-2 inch cubes, coarse salt and freshly ground pepper, 4 tablespoons of flour, 6 tablespoons of olive oil, plus more as needed, 1 cup of dry red wine, 2 1/2 cups of homemade or low-sodium beef broth, 8 ounces of pearl onions, peeled, 1 cup of canned whole plum tomatoes, crushed, 5 carrots, peeled and cut into 1-inch pieces, and 12 ounces of white button mushrooms, quartered if large. To make the stew, season the beef with salt and pepper, toss in flour, and brown in a Dutch oven. Deglaze the pan with red wine, add beef broth and reserved cooking liquid, and simmer for 1 hour and 15 minutes. Add carrots and mushrooms and cook until tender, about 45-50 minutes. This hearty stew is perfect for a cozy dinner on a chilly night.
