This recipe for spicy chili is perfect for serving with traditional accompaniments such as diced red onion and avocado, sour cream, grated Monterey Jack cheese, and fresh cilantro. You can use store-bought tortilla chips instead of making your own. This recipe was shared with us by John Baricelli, the head of the test kitchen at the TV studio. The ingredients include ancho chiles, cumin seeds, homemade chicken stock, chipotle chiles in adobo sauce, olive oil, onion, garlic, boneless chicken thighs, Mexican oregano, epazote, ground chipotle chiles, kidney beans, and diced tomatoes. To make the chili, youll need to toast the ancho chiles and cumin seeds, puree them with the chicken stock and chipotles, and then cook the chicken with the spices and vegetables before adding the beans and tomatoes and simmering until thickened. Serve with toppings of your choice, such as cheese, onion, cilantro, sour cream, avocado, and tortilla strips. Enjoy!
