This quick take on an Italian slow braise is thick with tomatoes, onions, and mushrooms. The recipe calls for 40 minutes of total time and serves 4. To prepare, heat 3 tablespoons of olive oil in a Dutch oven or heavy pot. Brown 8 skinless chicken thighs with salt and pepper in two batches, then transfer to a plate. Add 10 ounces of quartered white mushrooms to the pot and cook until browned. Add 1/4 cup of all-purpose flour and cook for 1 minute. Add 1 can of whole tomatoes (broken up with a spoon), 1 cup of dry white wine, 2 medium onions (cut into 8 wedges each), 4 sliced garlic cloves, and 1/3 cup of halved pitted green olives. Add the chicken back to the pot with any juices. Simmer until the chicken is cooked through, about 15 to 20 minutes. Season with salt and pepper. While the chicken is cooking, broil 12 rounds of plain prepared polenta brushed with the remaining oil and seasoned with salt and pepper. Serve the chicken cacciatore over the polenta.
