Paella is a traditional Spanish dish that is known for its vibrant golden color and bold flavor, thanks to the use of saffron. However, if you cant find saffron, this version is just as delicious. The recipe calls for chicken broth, saffron (optional), paprika, olive oil, chicken thighs, salt, pepper, chorizo, onion, garlic, tomatoes, Arborio rice, mussels, and shrimp. The dish is prepared by combining the broth, saffron, and paprika in a pot and bringing it to a boil. In a large pan, the chicken is cooked until the skin is golden, then removed and set aside. Chorizo is added to the pan and cooked until browned, then onion, garlic, and tomatoes are added and cooked until thickened. Rice is added to the pan and mixed with the tomato and chorizo mixture, then the hot broth and salt are added. The chicken is placed on top of the rice and the mussels are nestled in the liquid. Shrimp are added on top and the pan is placed in the oven to cook until the liquid is absorbed. The dish is allowed to rest for 10 minutes before serving. Pimenton, a smoky and rich paprika, is a classic ingredient in Spanish paella, but smoked or sweet paprika can be used as a substitute.
