These light and flaky cookies are made with whole milk instead of traditional churned cream. Source: Martha Stewart Living, March 2006. Makes about 20. Ingredients: 5 cups flour, plus more for dusting. 2 tablespoons sugar. 2 tablespoons baking powder. 1 tablespoon coarse salt. 3/4 cup cold lard or vegetable shortening, cut into pieces. 1/4 cup cold unsalted butter, cut into pieces, plus 1/4 cup melted butter. 1 3/4 cups whole milk. Instructions: 1. Preheat oven to 375 degrees. Shake flour, sugar, baking powder, and salt in a medium bowl. Work the lard and butter into the flour mixture with a pastry blender or your fingers until the largest pieces are the size of small peas. Add milk and stir with a fork until dough forms. 2. Turn dough out onto a lightly floured surface and pat into a 1-inch-thick round. Cut edges with a floured 2 1/4-inch biscuit cutter. Space 2 inches apart on a baking sheet lined with parchment paper. Gather scraps together and repeat. 3. Brush tops with melted butter. Bake until lightly golden and cooked through, about 25 minutes. Transfer to a rack to cool for 5 minutes. Serve warm.
