These chocolate almonds that are simple to make are sure to please everyone with a sweet tooth. Source: Martha Stewart Living, December 2001. Makes 7-8 cups. Ingredients: 14 ounces of unblanched whole almonds, 1 1/4 cups of sugar, 1/4 cup of water, 1 teaspoon of ground cinnamon, 1 pound of high-quality semi-sweet chocolate, finely chopped, 3/4 cup of Dutch process cocoa powder. Instructions: 1. Preheat the oven to 350 degrees. Place the almonds in a single layer on a lined baking sheet and roast until fragrant, about 10 minutes, shaking the pan halfway through. Line three rimmed baking sheets with parchment paper. Top two baking sheets with cooling racks; set aside. 2. In a medium saucepan, combine the sugar, water, roasted almonds, and cinnamon. Cook over medium heat, stirring constantly, until the sugar turns golden and begins to crystallize, and the almonds are completely coated, about 8 minutes. Pour the almond mixture onto the parchment-lined baking sheet. Transfer to the freezer or refrigerator to cool for 15 minutes. 3. Place the chocolate in a heatproof bowl and set over a pot of simmering water. Stir until melted. Add the cooled almond mixture, stirring until the nuts are thoroughly coated. Divide between the two prepared cooling racks. Separate the almonds with a fork. Place in the refrigerator until the chocolate is set, 3-4 minutes. 4. Place the cocoa powder in a large bowl and add the almond mixture. Toss to coat, shaking off any excess cocoa powder. Store in an airtight container for up to 1 month.
