These muffins with a fresh strawberry flavor make for a delightful treat. Eat them for breakfast, as a snack, or for dessert – theyll have blueberry siblings running for their money. This recipe is from Body + Soul, July/August 2009. The total time is 35 minutes with 15 minutes of prep and it makes 12 muffins. The ingredients include sliced strawberries, sugar, flour, baking powder, baking soda, salt, cinnamon, low-fat buttermilk, light olive oil or vegetable oil, an egg, and pure vanilla extract. The instructions are to preheat the oven to 400 degrees, mash the strawberries with sugar, mix the dry ingredients in a bowl, mix the wet ingredients in a separate bowl, combine the two mixtures, scoop the batter into muffin cups, and sprinkle sugar on top. Bake for 17 minutes and let cool before serving. These heart-shaped muffins are full of healthy antioxidants and more.
