Makes twenty 2-inch pancakes. Ingredients: 2 medium brown potatoes, peeled and grated by hand, 3 medium zucchinis, seeded and grated by hand, 2 scallions, peeled and minced, 1 tsp salt, 1/4 tsp freshly ground black pepper, 2 large eggs, lightly beaten, 2 tbsp flour, 1/4 cup beer, vegetable oil for frying. Instructions: 1. Wrap the vegetables in a clean kitchen towel and squeeze out the excess liquid. Mix in salt, pepper, eggs, flour, and beer. 2. In a large sauté pan over medium heat, heat 1/8 inch of oil for 1 minute. Add the batter by the tablespoonful, flattening to form pancakes. Cook until golden, about 4 minutes. Flip and cook for an additional 1 minute; transfer to a paper towel.
