Grilled corn with cilantro is delicious. Instead of butter, you can use olive oil. This recipe is from Martha Stewart Living, March 2011. The total time is 20 minutes, and it serves 12. The ingredients include 1 cup of packed, chopped fresh cilantro, 1 stick of unsalted butter at room temperature, 1/2 teaspoon of finely grated lime zest, 2 teaspoons of fresh lime juice, coarse salt, and 12 ears of shucked corn. The instructions are to puree the cilantro, butter, lime zest, lime juice, and 1/2 teaspoon of salt in a food processor. Then, brush the corn with some of the cilantro butter and salt. Grill the corn, turning occasionally, until lightly charred and bright yellow, about 10-12 minutes. Brush the corn with the remaining cilantro butter and sprinkle with grated cotija or parmesan cheese. Serve warm. The cilantro butter can be refrigerated for up to 3 days. Bring to room temperature before using.
