This eggy bread is served with a dose of sweet almond milk and sliced almonds. Source: Martha Stewart Living, November 1997. Makes 10 slices. Ingredients: 10 tbsp unsalted butter, room temperature, 2/3 cup granulated sugar, 1 1/2 cups finely ground almonds (5 ounces), 1 large egg, 1 tsp pure almond extract, 1 12-ounce loaf brioche bread, sliced into 10 pieces, 1/3 cup sliced almonds, Confectioners sugar for dusting. Instructions: 1. Preheat oven to 350 degrees. Using an electric mixer fitted with the paddle attachment, beat butter and granulated sugar until creamy. Scrape down bowl. Add ground almonds, egg, and almond extract; beat until well combined. 2. Spread generous 3 tbsp mixture onto each brioche slice. Top with sliced almonds and place on ungreased baking sheet. Bake until tops are golden brown and brioche is toasted on both sides, about 20 minutes. Remove from oven; transfer to wire rack to cool. Dust with confectioners sugar. Serve warm or at room temperature. Cooking notes: Unblanched or blanched almonds can be used, but unblanched almonds will make the toast slightly darker. Day-old brioche also works well.
