This southern-style paella contains Mexican chorizo and fresh seasoned pork sausage, which should not be confused with its dry-cured Spanish cousin. The recipe is from chef Rick Bayless. The ingredients include low-sodium chicken broth, poblano pepper, canned peeled tomatoes, olive oil, chicken thighs, onion, garlic, Mexican chorizo sausage, medium-grain rice, shrimp, clams, frozen peas, flat-leaf parsley, and silver tequila (optional). The instructions involve heating the chicken broth with salt, roasting the poblano pepper, blending the tomatoes, browning the chicken, cooking the onion and chorizo, adding the garlic and poblano, stirring in the tomato puree, adding the rice and broth, cooking until the rice is almost done, adding the chicken, arranging the shrimp and clams, covering and baking the paella, and finishing with peas, parsley, and tequila. Serve immediately.
