This dish has been the staple of Lucinda Scala Quinns family for 20 years; from her cookbook “Mad Hungry”. Source: Martha Stewart Living, December 2009. The recipe calls for high-quality red wine vinegar, garlic, fresh rosemary, bone-in chicken, salt, pepper, olive oil, and chicken broth. The chicken is marinated in the vinegar mixture for at least 15 minutes before being browned in a hot skillet with olive oil. Chicken broth is added to the pan and cooked until reduced, then the vinegar mixture is added and cooked until it forms a glaze. The dish is best served with polenta or rice to soak up the sauce.
