This cream is perfect for filling mini Boston Cream Pie cupcakes that will please all crowds. The recipe is from Martha Stewart Living, February 2009. It makes 1 1/2 cups. The ingredients include 2 large egg yolks, 1/4 cup sugar, 2 1/2 teaspoons cornstarch, a pinch of salt, 1 cup whole milk, and 1/2 teaspoon pure vanilla extract. The instructions are to beat the egg yolks until smooth, then mix in the sugar, cornstarch, and salt in a medium saucepan over medium heat. Slowly and evenly add the milk, stirring constantly, until the mixture begins to bubble and thicken, about 5 minutes. Pour 1/3 of the milk mixture into the egg yolks, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring often, until thick, 2-4 minutes. Stir in the vanilla. Strain the vanilla cream through a fine sieve into a bowl. Press plastic wrap directly onto the surface. Chill, at least 1 hour or up to 2 days.
