These irresistible chocolates are a wonderful treat to serve guests. Source: Martha Stewart Show, December 2009. Makes 64 servings. Ingredients: 1 3/4 cups plus 4 teaspoons heavy cream, 4 large egg yolks at room temperature, 1/4 cup sugar, 2 tablespoons light corn syrup, 2 tablespoons water, 3 tablespoons hazelnut praline, 7 ounces dark chocolate, melted, 1 teaspoon pure vanilla extract, a pinch of salt, 64 dark chocolate dessert cups, 64 pieces of toasted and halved hazelnuts for garnish, shaved dark chocolate for decoration. Instructions: 1. Using an electric mixer on medium speed, whip the cream until soft peaks form. Transfer to the refrigerator and chill for 1 hour. 2. In a clean mixing bowl and with a clean whisk, beat the egg yolks on high speed until pale and frothy. At the same time, bring the sugar, corn syrup, and water to a boil in a small, heavy saucepan over high heat, stirring to dissolve the sugar. Continue boiling for about 1 minute. With the mixer on medium-low speed, carefully pour the hot syrup into the bowl. Beat on medium-high speed until slightly thickened, about 5 minutes. Beat in the hazelnut praline. Fold in the melted chocolate, vanilla, and salt with a flexible spatula. 3. Add one-third of the chocolate mixture to the whipped cream; whisk to combine. Add the remaining chocolate mixture, folding until fully combined. Strain through a coarse sieve into a large bowl, discarding any solids. 4. Transfer the mousse to a disposable pastry bag or a large plastic bag. Use scissors to cut a small hole in the bottom of the bag or one corner of the plastic bag. Pipe the mousse into the chocolate cups to fill; serve garnished with hazelnuts and shaved chocolate. Cooks Notes: Raw eggs should not be used by pregnant women, babies, young children, or anyone whose health is compromised.
