These irresistible carrot cake mini cupcakes are easy to make and are sure to please everyones sweet tooth. The recipe makes 42 mini cupcakes and includes ingredients such as sugar, eggs, vegetable oil, vanilla extract, flour, cinnamon, baking powder, baking soda, salt, grated carrots, and raisins. The cupcakes are topped with a maple cream cheese frosting. To make them, preheat the oven to 350 degrees Fahrenheit and line 42 mini muffin pans with cupcake liners. In a mixing bowl, beat together the sugar, eggs, oil, vanilla, and buttermilk until well combined. In a separate bowl, sift together the flour, cinnamon, baking powder, baking soda, and salt. Slowly add three-quarters of the flour mixture to the sugar mixture, mixing until well combined. Toss the grated carrots and raisins in the remaining flour mixture, then fold into the batter. Fill each muffin cup with about 2 teaspoons of batter and bake for 10-12 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool on a wire rack before frosting with the maple cream cheese frosting. This recipe was featured on the Martha Stewart Show in September 2007.
