This recipe for a classic combination is from Julie Haifley, a reader from Washington, D.C. Source: Everyday Food, April 2005. The recipe takes 1 hour and 30 minutes and serves 12. The ingredients include 1/2 cup vegetable oil, 2 cups all-purpose flour, 2 teaspoons baking powder, 2 teaspoons baking soda, 1 1/2 teaspoons ground cinnamon, 1 teaspoon salt, 1/8 teaspoon ground cloves, a pinch of ground nutmeg, 1 1/2 cups sugar, 3/4 cup low-fat plain yogurt, 3 large eggs, and 3 cups loosely packed finely grated carrots. The instructions involve combining the dry ingredients in a food processor, adding the wet ingredients, pouring the batter into a greased pan, baking for 30-35 minutes, and frosting with cream cheese frosting. The cake can be served in the baking dish or turned out onto a plate.
