This is a delicious lemon-almond cake that, like most upside-down cakes, is impressive to see. Source: Koko elämä, January/February 2011. The ingredients include 2 tablespoons of softened unsalted butter, 1/4 cup of light brown sugar, 2 Meyer lemons, 1 1/2 cups of toasted whole almonds, 1/2 teaspoon of baking soda, 1/2 teaspoon of kosher salt, 4 large egg yolks, 1/3 cup of honey, and 4 large egg whites. The instructions are to preheat the oven to 350 degrees, grease an 8-inch cake pan with butter and sprinkle with sugar, arrange lemon slices on top, pulse almonds in a food processor, mix with egg yolks and honey, beat egg whites until doubled in volume, fold into almond mixture, transfer batter to cake pan, and bake for 30-35 minutes. Serve warm or at room temperature. This recipe sounds amazing!
