This recipe is in Finnish and it is about decorating Strawberry Cupcakes. The recipe is from Martha Stewart Living, February 2009 and it makes about 5 cups. The ingredients include 4 large egg whites, room temperature, 1 1/4 cups sugar, 3/4 pound (3 sticks) unsalted butter, softened, cut into small pieces, and 1 1/2 cups fresh strawberries, cleaned. The instructions are to place the whites and sugars in a heatproof mixing bowl set over a pan of simmering water, beat until the sugar dissolves and the mixture registers 160 degrees on a candy thermometer. Then, remove from heat and attach the bowl to a mixer, beat on medium speed for 5 minutes. Add the butter one piece at a time, mixing well after each addition. Finally, switch to a paddle attachment, add the strawberry puree, and beat until smooth, 3-5 minutes. The cooks note is to chill for up to 3 days, bring to room temperature, and beat on low speed until smooth before using.
