This fluffy vanilla cake gets its name (and flavor!) from the milk-soaked batter. Martha made this recipe in episode 705 of Martha Bakes. Makes one 9-inch layer cake. Ingredients: 2 tbsp unsalted butter, plus more for pans; 3 cups flour, plus more for pans; 1 tbsp baking powder; 1 tsp salt; 6 large eggs; 3 cups sugar; 2 tsp pure vanilla extract; 1 1/2 cups whole milk; Chocolate whipped cream. Instructions: 1. Preheat oven to 325 degrees. Butter and flour two 9-inch round cake pans; set aside. In a medium bowl, whisk together flour, baking powder, and salt; set aside. 2. In the bowl of an electric mixer fitted with the paddle attachment, beat eggs and sugar on medium-high speed until very thick and pale yellow, 4 to 5 minutes. Beat in vanilla. 3. Meanwhile, heat milk and butter in a small saucepan over medium heat until butter is melted. With mixer on low speed, add flour mixture to egg mixture in three parts, alternating with milk mixture and beginning and ending with flour; beat until just combined. 4. Divide batter evenly between prepared pans, and smooth with an offset spatula. Bake, rotating pans halfway through, until cakes are golden brown and a cake tester inserted in the centers comes out clean, 55 to 60 minutes. Transfer pans to a wire rack to cool 15 minutes. Invert cakes onto rack; peel off parchment. Reinvert cakes, and let them cool completely, top sides up. Spread 1 cup chocolate whipped cream over top of one cooled cake layer. Top with remaining cake layer, and spread remaining whipped cream over entire cake to cover. Serve. Cooking notes: You can also halve the ingredients to make a single-layer cake.
