These Classic Yellow Butter Cupcakes offer a perfect range of different flavors – from Chocolate Ganache Glazes to classic Seven-Minute Frosting. The recipe, sourced from Martha Stewart Living in February 2009, yields 36 cupcakes. The ingredients include 3 cups of cake flour (not self-rising), sifted, 1 1/2 cups of all-purpose flour, 2 1/4 teaspoons of baking powder, 1 1/2 teaspoons of coarse salt, 3/4 teaspoon of baking soda, 9 ounces (2 sticks plus 2 tablespoons) unsalted butter, softened, 2 1/4 cups of sugar, 5 large eggs and 3 large egg yolks, at room temperature, 2 cups of buttermilk, at room temperature, and 2 teaspoons of pure vanilla extract. The instructions are to preheat the oven to 350 degrees, line muffin pans with paper liners, beat dry ingredients in a large bowl, cream butter and sugar with a mixer until light and fluffy, add eggs one at a time, reduce speed to low, mix remaining wet ingredients in a bowl, add dry ingredients to butter mixture in 3 additions, alternating with wet ingredients and ending with dry, divide batter among muffin cups, filling each full, bake cupcakes until testers inserted into centers come out clean, about 20 minutes, and let cool in pans on wire racks. These cupcakes keep, covered, for up to 3 days.
