These green pistachios and red cranberries combine to make the perfect cookie for Christmas. Cornmeal gives these biscotti an extra crumbly and sandy texture, while dried cranberries add a rough element. Source: Martha Stewarts Cookies Makes about 2 dozen Yield Ingredients 1 1/4 cups flour 1 1/4 cups yellow cornmeal 1/2 teaspoon baking powder 1/2 tsp coarse salt 6 tablespoons unsalted butter, room temperature 1 cup sugar 2 large eggs 1 tablespoon finely grated lemongrass 1 cup dried cranberries 1 cup chopped pistachios Instructions 1. Preheat oven to 350 degrees on the middle rack. Shake flour, cornmeal, baking powder and salt. 2. Put the butter in the bowl of an electric mixer with a paddle attachment; mix on medium speed until smooth. Add sugar and mix until light and fluffy. Mix in eggs one at a time until well combined. Reduce speed to low. Add the powder mixture at once; mix until just combined. Add lemongrass, cranberries and pistachios and mix until combined. 3. Transfer the dough to parchment paper. Stick to a stick about 14 x 3 1/2 inches. Bake until firm, lightly browned and slightly cracked, 30-35 minutes. Let cool on the sheet pan for about 15 minutes. 4. Transfer the log to a cutting board. Use a serrated knife to cut diagonally into 1/2-inch thick slices. Arrange the slices on a parchment-lined baking sheet.
