These chocolate cakes get an extra dose of Christmas spirit thanks to the festive dried cranberries. Source: Everyday Food, December 2009. The ingredients include 16 ounces of bittersweet chocolate, roughly chopped, 1 cup of all-purpose flour (sifted and leveled), 3 tablespoons of unsweetened cocoa powder, 1 teaspoon of baking powder, 1/2 teaspoon of coarse salt, 1/2 cup (1 stick) unsalted butter, at room temperature, 3/4 cup granulated sugar, 1/2 cup packed light brown sugar, 2 large eggs, 1 teaspoon of pure vanilla extract, and 1/2 cup of dried cranberries. The instructions are to preheat the oven to 350 degrees, melt 10 ounces of chocolate in a heatproof bowl set over (not in) a pot of simmering water, mix the dry ingredients in a medium bowl, beat the butter and sugars in a large bowl with an electric mixer until light and fluffy, add the eggs and vanilla and beat until combined, beat in the melted chocolate, gradually add the dry ingredients and beat until just combined, fold in the remaining 6 ounces of chocolate and the cranberries, drop the batter onto parchment-lined baking sheets, and bake for 15-17 minutes. Let cool on wire racks.
