These traditional Italian cookies, which pass through Lucindas great starfish Carolin, are made from sweet Marsala wine and light lemon preparation. From Lucinda Scala Quinns book “Lucindas Rustic Italian Kitchen”. Source: Mad Hungry, October 2010. Makes 2 1/2 dozen. Ingredients: Cookies: 3 cups flour, 2 teaspoons baking powder, 1 teaspoon coarse salt, 1/2 cup sugar, 1 large egg, 1/2 cup extra-virgin olive oil, 1/2 cup Marsala wine. Icing: 2 tablespoons milk, 1 tablespoon lemon juice, 1 cup confectioners sugar. Instructions: 1. Preheat oven to 375 degrees. 2. In a mixing bowl, combine flour, baking powder, and salt. 3. In a separate larger bowl, cream sugar and egg until well combined. Mix in olive oil and wine. Slowly add flour mixture until well combined, kneading slightly until dough is easy to handle and medium-firm. 4. On a clean surface, roll dough into 1/2-inch thick, un-smoked cigars. Cut each cigar into 6-inch pieces, folding each piece into a loop shape. Press dough with fingers to seal them together. Place on a parchment-lined rimmed baking sheet. 5. Bake for 15-20 minutes or until slightly golden. Remove to a cooling rack and cool completely. 6. If you want to ice them, mix 2 tablespoons milk and 1 tablespoon lemon juice into 1 cup confectioners sugar. It should have a thick dipping consistency. Dip one side of the cookie into the icing and let dry.
